This year, for the first time since they were born, I did not have to prompt/remind/harass my children into doing something for Mother's Day. They're 26 and 24, btw LOL. Two weeks ago, they asked Nancy if they could take us out for dinner for Mother's Day and that's what they are doing tomorrow night (they're spending today with our daughter-in-law's mother). Today, I'm preparing a meal for Nancy including her favorites - skillet herbed chicken, boiled potatoes with butter and dill, Scandinavian-style red cabbage, and roasted asparagus. I have a gin-and-tonic waiting for her for when she gets home from church (today's a work day for her, she's a pastor).

My 13 y.o.son picked out a card that said your 1st mothers day for his mom .. lol I made her breakfast and cooked some pulled pork and greens with fried okra. Never heard of Scandinavian style red cabbage and I eat lefse and rommegrot like it's going out of style, gonna have to look that up.

Gin and Tonic is the most underrated cocktails. Good tonic and a squeeze of sour citrus right at serving time... so refreshing on a hot day.

It is chopped up red cabbage cooked slowly and at length with chopped apple, little vinegar, and salt. If the apple doesn't add enough sweetness to balance the vinegar, then add a little sugar. Easy and delicious.
