I brewed a beer that ended up with a higher OG (1.090) than I thought it would, as I had a very efficient partial mash. The "recipe" I had for this called for one pack of yeast so I pitched it, but am now wondering if I should pitch another one? The kicker is that the beer is already a week into fermentation, so it is pretty much done and shows no signs of activity. The gravity after 3 days was already down to 1.024, so obviously the yeast is working well, as the beer was at 8.6% at that time. My question is, since mrmalty.com indicates that I should have 1.5 packs of yeast for this batch, should I add another half pack, this far into the fermentation process?
