About a month ago I boiled the second runnings from a saison and left it outside overnight to collect whatever was floating in the air. The next morning put it into a carboy with an airlock. After a couple days it had a lot of activity and then what appeared to be yeast flocculated to the bottom. 3 weeks later I've got what appears to be white mold in one spot. Should I bottle it, try to save the yeast, or dump it and move on?View attachment ImageUploadedByHome Brew1465146566.735438.jpg
 
That's what I was afraid of. I was really hoping someone would tell me it was salvageable though. Oh well, it didn't cost anything other than time and shattered hopes.
 
I don't have a ph meter and there's enough headspace that I wouldn't be able to get a ph strip far enough into the carboy.

Would the ph matter?
