I have always been a fan of fragrant IPA's that do not go overboard with bittering hops. So I decided to venture into a partial mash using 2oz of East Kent (4.5%) bittering and 1oz of Fuggles (4.0%) flavoring. I added an additional 2oz of Fuggles whole leaf in the secondary along with 2oz of Oak Chips as sort of an experiment.

After bottling last night and tasting of course, I decided 2oz of Oak Chips might have been too much. The initial taste is a fantastic hop taste, but the after taste leads to a pretty dry bourbon flavor.

Since I am very new to additions in the secondary, does anyone know if cutting the oak in half to 1oz will dramatically change the taste?

I am really just shooting for a hint of oak without the overpowering flavor.

Just tried one. The bottle conditioning seems to be mellowing out the oak a little. Yep, I agree, use probably an ounce less of oak next time!
