I have a recipe that calls for 6# strawberry and 1.5# lactose at 2nd days after fermentation start. My question is, the light grain bill won't bring gravity to 1.073 it only puts it at about 1.05.... something anyhow will the strawberries that early In Fermentor add the additional points needed to reach OG?? I'm on day 1 in the fermentor action is taking place and need to add tomorrow any help please?
 
No, it won't boost at that high. It actually won't boost it at all really, the specific gravity of strawberries tops out at 1.040 or so.
 
Thank you sir! I'm not heart broken but i need to adjust my efficiency calculations for the next one I do. Everyone I've talked to about it said I probably ruined it putting frozen strawberry that I emulsified in the ninja which I sanitized. They all say I should have put it in secondary which honestly I don't secondary many beers. How do you feel about such an early addition after pitching yeast?
 
Sorry.. didn't notice you'd replied! It's probably too late to chime in.. but I would wait until fermentation is mostly complete before adding the strawberries. The offgasing of CO2 from the beer will carry some of that strawberry aroma away with it. Since strawberries are a pretty delicate flavor overall, anything you can do to maximize the flavor/aroma is key!
 
Also, you definitely didn't ruin it! If you'd like to post the full recipe and your process, I'll try to lend any pointers I can!
 
I'm curious about this as well. How did this turn out? Was 1.5# lactose too much or too little?
