my last two batches tasted great at every stage of he process (honey nut brown followed by IIPA, both extract w/ grains) until they were in the bottles for about 2+ weeks.

at that point i started tasting a metalic flavor which only got worse as time went on.

the honey nut brown has been in the bottles for about 6-7 weeks & the IIPA is at about 4-5 weeks. i have not touched either for about 2 weeks in the hopes things will settle out.

i clean & sanitize everything like a madman. if anything, my cleaning has become more over the top w/ each batch.

please help! i'm afraid to bottle my honey amber! its begging to get out of the secondary!

I'm curious, as well. I tried one of Walker-san's porters yesterday which he has bemoaned on the boards before (trying to get the perfect porter recipe) and I thought it was a fantastic porter with the exception of a slight metallic taste. We were attributing this taste to some LME he used. Have you been using LME or DME?
 
Also consider changing bottle caps. Once used soda bottle overruns (orange crush, actually) that appeared to impart a flaovr to the brew.

I'll second that: every time I've used LME from a can, it seems like you can taste a wee bit of the can in the final product. I only sense this when it comes in a can--the times I've used fresh bulk LME that came in a plastic container, I got great results.

I don't think Walker was doing the can route...pretty sure it was a bulk container from the LHBS, but maybe he'll peak in here.
 
I don't use LME anymore. That porter I gave you was made from Briess extra light DME that BOSTON and I bought in bulk (50#) from the LHBS and split.

I don't detect anything metallic in it, but attribute the low volume sharp aftertaste to using WAY too much black patent. I could be wrong. BOSTON and Kaiser have been given access to that same porter. BOSTON never mentioned a metallic taste. No input from the Kaiser yet, though.

I did buy bulk LME in a plastic container from the LHBS several months ago, but have personally found that over the course of a few months, every batch of beer made with that LME developed a tangy taste that keeps increasing in stregth as time passes. Would I call it metallic? Sure, I could see it described as such.

Not sure what I'm tasting then...could be the black patent, but it had a metallic taste to it to me. In terms of roastiness and bitterness I thought it was great.

Anybody want to go meet under the bridge and brownbag some today?
