I have a cooler converted to a mash tun. How do I go about raising my mash temp to 149 after doing a first mash at 122??
 
either a decoction (removing some of the mash and boiling it) or infusion (heating extra water and adding it). you can use the rest calculator here to figure out the volume & temp you'd need to add: http://www.rackers.org/calcs.shtml

any reason you're doing a protein rest?
 
One of the recipes I'm considering calls for it. I am thinking of trying a Dogfish 90 recipe. Thanks.
