After a trip to the cottage I've come back with the idea to make a Maple beer. I've only come across one recipe (a MR Beer one) that uses pure maple syrup and tettnanger hops.

I can't decide between the stout or the wheat, but I am leaning towards the wheat beer.

Some searching has lead me to using the actual maple sap instead of water, and yet another says to use fenugreek for that maple taste/aroma.

Any ideas on what I should do for a 23 litre batch?

I would use all natural maple extract, generally you don't get a lot of flavor from the sap or syrup. There was another thread several months ago regarding the same question and I shared the same thoughts. Don't know if they actually posted the results but it would be worth doing a search.

would pure maple extract give me the flavor of maple syrup in the beer? would you add this to a secondary? approx how much do you think would be "enough" to get a good maple charteristic?

It will give you the flavor but if you use imitation flavoring it might be very artificial tasting. The only logical way I know to come up with a dosage is to experiment with some pints of beer. Once your happy, scale it up and add it at bottling time.
