I'll be the first to admit that I jump into things quickly. Sometimes too quickly, but the brew bug bit, sank it's fangs in good and I'm completely smitten! It's been a whopping 4 days since I boiled my first wort. After reading all the rave reviews of EdWort's apfelwein I decides I had to make some for Christmas. Granted I won't have time to carb any up to see what it's like carbed and flat, but I'll save half the batch to be primed and bottled for a few weeks later (maybe New Years)! So off to the LHBS for another carboy and now it's in primary sitting next to my nut brown ale in the bathtub. I've never seen a bathroom that made my mouth water before! :D

Anyway, just wanted to throw a thanks out to this forum. I'm new but have been lurking for a few weeks and have rarely found such an active group of helpful people. And to all the other lurkers like me that are deciding whether to pony up and give it a shot, do it! I haven't gotten a sip of my home brew yet but can tell you this is FUN! And if it doesn't come out fantastic, I like IPAs more that nut brown ales and those ingredients are waiting patiently in the wine cellar for an empty carboy!

Not to burst your bubble but Apfelwein is best if fermented in a primary for at least 2 months.. Bottle conditioning (depending on who you talk to) can take anywhere from 2 months to a year...

really? i thought it was more like a month in primary?

It really depends on who you talk to.. My batch has been in the primary over a month and it's still actively bubbling (once every few minutes)... Can't wait for this to finish.. I want the carboy space back :mug:
 
Shoot. I didn't realize that it took longer to bottle condition. Now that I reread EdWort's recipe it does say "at least 6 weeks" at the top and down in the narrative says after at least 4 weeks it's ok to bottle but I missed the first part. I guess he meant bottle it for after 4 weeks but let it sit there for at least two more and he definitely says it's good to leave in in primary for 3 months. Ah well, at least the brown ale will have been in bottles for 4 weeks by then. :) Are there any concerns with only bottling a couple after 4 weeks to see how they taste as long as everything is properly sanitised?
 
i didn't have that experience with apfelwein. i fermented for almost exactly 4 weeks and then bottle conditioned for the normal 3 and it was definitely drinkable. not to say that it didn't improve with time, but you will be able to drink it after a month if you don't carb some of it. hey, it's your first batch... there's plenty of time for aging later. you know it's ready when it clears up. plus, you can age in the bottle.
