I've decided to try my hand at a personal graff recipe today. Originally, I was planning on using crystal 120L and some different types of DME. But I decided to change the ingredients to keep it in the gluten free category ciders are in. I home malted the buckwheat and am really happy with how it seems to have turned out.
Materials:
Nottingham yeast.
1lb malted buckwheat (similar to 120L)
1lb light candy sugar
1oz Cascade hops
4 gallons store bought cider
Directions
Steep grains in .75 gal water for 30 mins at 155F
Sparge with .50 gal water at 170
Bring to a boil add the candy sugar
Add .5oz Cascade @30min
Cool wort and add to 4 gallons cider.
I'm trying this out based on what I've seem from others on here about graffs. I've brewed about 4 batches of different ciders, all with dryer yeasts, and want to brew this up so I can drink it without the long aging process. If anybody has any tips or changes to this for me, my ears are open. Thanks!
