I've decided to try my hand at a personal graff recipe today. Originally, I was planning on using crystal 120L and some different types of DME. But I decided to change the ingredients to keep it in the gluten free category ciders are in. I home malted the buckwheat and am really happy with how it seems to have turned out.

Materials:

Nottingham yeast.
1lb malted buckwheat (similar to 120L)
1lb light candy sugar
1oz Cascade hops
4 gallons store bought cider

Directions
Steep grains in .75 gal water for 30 mins at 155F
Sparge with .50 gal water at 170
Bring to a boil add the candy sugar
Add .5oz Cascade @30min
Cool wort and add to 4 gallons cider.

I'm trying this out based on what I've seem from others on here about graffs. I've brewed about 4 batches of different ciders, all with dryer yeasts, and want to brew this up so I can drink it without the long aging process. If anybody has any tips or changes to this for me, my ears are open. Thanks!
 
Sounds yummy. I haven't done a graf yet myself. Think I'm going to wait until next season. I've been thinking of adding some lactose and oats in mine.
 
Interesting. Never heard of malted buckwheat...how does it taste?

I love making graff, and have to force myself to make a straight cider occasionally.

This is the first time I've brewed with buckwheat, I tasted a few of the groats and they had a bit of a sweeter taste to them. Apparently the flavor contribution it adds is much less than barley, but gives a bit of a caramelly taste the way I roasted it. I wanted to use something gluten free that would add body to this without using sorghum or other alternatives. Unfortunately my dad had the hydrometer, so I wasn't able to take an OG reading. But fermentation started after about 8 hours and is now bubbling once every second. Very pleased so far.
 
I'm looking to buy some malted gf grain to start brewing graf, and I'm leaning toward buckwheat. How did this one turn out?
