I am planning on making an American Pale Ale with a grain bill in this ballbark--I wanted to try something different than my normal 2-row plus crystal 60 and saw lots of happy people with Vienna APAs and lighter crystal malts.

50% Vienna
40% 2-row
10% crystal 20

The pellet hops I have on hand are these. (I left out some inappropriate stuff like Saaz and EKG.)

(Name, oz)
Amarillo 5.30
Citra 5.80
Magnum (US) 6.50 (my normal bittering hop)
Mosaic 4.20
Mosaic 2.00 (this batch smells like onions so I am reluctant to use it for late or dry hops.)
Northern Brewer 1.44
Willamette 3.00

Any ideas? I am willing to get a new bag of something, too.

Normally I bitter with Magnum, do small additions at 10 and 5 minutes, then a long whirlpool with ~3 oz at about 165F.

I'd bitter with some Magnum, then 1oz each Amarillo & Citra at 10 minutes, and 2oz each Amarillo, Citra, Mosaic at whirlpool (165°-ish) for 20-30 minutes. Add whatever is left of the Amarillo, Citra and Mosaic to the dry hop charge. You can split that into two rounds, the first added as fermentation is nearing completion and the second a few days later.

Anyway, that's what I'd do. And I'd throw that oniony Mosaic out.

Bitter with Magnum at 60.

Save NB and will for a Stout or Porter.

I'd go with a mix 2:1 Citra and Mosaic mix for about 6 to 8 ozs finishing hops. Maybe 2 @ 10, 2 @ 5, 2@ 0, and 2 dry hops.
