Has anyone tried just mixing the sugar, water and cirtic acid in a quart jar and placed straight in the oven to come up to temp and then let sit for the required time?

skip the stove top?

Simple dissolve the sugar in hot water and place it in a jar in the oven?
Not in quart jars but I use that method in a Dutch oven.
 
Not quite that direct, but I've tried hitting temp on the cooktop then sticking the whole pan/pot in the oven at 250 for a while.

For me, the plain invert took a long time to develop color. This is 4 hours at 30min intervals.

The Candi Syrup developed color very nicely using the oven method though.
I would expect a lot darker after 4 hours... maybe needs a higher temperature? Maybe it just plateaus at 250' regardless ot how long it sits there? Is it temp or time that will get it to the D-180 and higher range?
 
I think if you mix the water and sugar together and put directly in the oven and want a darker invert you would need to take into account that the temp will stay close to boil temp until all (or most) of the water is evaporated. I dont know how long that would take though but if you put a probe into the solution you could monitor for when the temp creeps up to the target temp.
