I'm kinda basing this off an ESB style mixed with an Old ale perhaps.

My Goal: I'm looking for a sweet & malty finish but balanced with the right amount of hops with fruity esters.

6 Gallon batch

Sugars:

10lbs MO
1.25lbs Victory
12oz of Special B
8oz Aromatic
7oz of Molasses

Hops:

.85 Target 60min
.65 Target 5 min
.45 Northdown 5min

IBUs 31
SRM 18
Og 1.064 Fg 1.016

London Ale III ferm at 70f for fruity esters


Does anyone think this will be balanced?
Should I mash High or low?
Is there too much victory or not enough crystal malt?
I have some honey malt on hand and a wide range of crystals at my disposal so if anyone has any other suggestions about the malts feel free.

Any input on the hops choice would be great too!
