So I would like to brew a Dunkle but not necessarily to style, looking for a nice complex malt forward beer with a pleasant balance of mild spice/sweet hop balance and here is what I came up with:

6.25 Gallon Batch
2 liter starter of WY3068-stepped up
4lbs 8oz Munich(Durst)
4lbs .3oz Wheat(Durst)
3lbs 2.2oz Pilsner 2 Row German
2lbs 12.6oz CaramunichII
8oz Vienna
.49oz Tettnang FWH
.25 oz Tettnang 60 min
.24 oz Tettnang 30 min
.24 oz Liberty 20 min
.24 oz Liberty 10 min
.24 oz Liberty 5 min
.24 oz Liberty 0 min
.5 tsp Yeast nutrient 10 min
.5 tsp Irish Moss 10 min

Mash-Protien Rest 3.25 gallon at 122F
Saccharification 2.89 gallon at 152 F
Mash out 2.53 gallon at 168F
Batch Sparge 2 steps with .21 gallon, 1.83 gallon at 168F

Est OG 1.060, est FG 1.013
3 weeks primary, no secondary

Looking for some input on hop variety and schedule, I think the grains look good, I know the ABV and OG are greater than style but that's what I'm shooting for. In addition some input on the mash schedule. Thanks for the suggestions!
