Hi,

This is a seasonal beer from 10 Barrel brewing in Bend, Oregon that my wife really likes. I messaged the brewery asking if they had a clone recipe they recommended and told me their recipe is a Berliner Weiss Sour recipe and then mixed with homemade Grapefruit soda.

Looking over the forums, I see many different Berliner Weiss recipes - is there anything I should keep in mind in trying to choose one when ultimately I'm mixing with soda? Interestingly, most of the recipes I've seen on the forums have a ABV% between 2-4%. 'Swill' has a listed ABV of 4.5%.

BW's are a low-ABV style, so a range of 2-4% is common. 4% is actually on the high end. BJCP Style Guidlines

For tips on how to brew one, there is no single way of making these. If you find the Jamil Show that covers Berliner Weiss', he covers a few ways to do it. His recipe in Brewing Classic Styles is a very good one. I can't recall exactly the grain bill for the one I did, but it was similar to his recipe. I mashed/sparged into my boil kettle, threw in a pound of un crushed 2-row, then hooked up my fermwrap to my BK and set it for 115deg. I left it at that temp for 48 hours and boiled for 15 minutes with a pinch of hops. Turned out to be a very tart, almost lemonade-like, beer. I loved it. There's a ton of details I left out, but i can fill them in later if you can't find the answers.

mri503 - Did you ever brew this up? My GF and I love Swill! We spent a ton of money on it this summer. If so, can you provide a recipe? I'd like to brew this soon! Thanks!

I had this at 10 barrel in Bend last summer and thought it was pretty good on a 90f degree day...
