Looking to brew a Saison this weekend. I had one that was citrus based but the brewer wasn't in and the bar chick didn't know which hops were used.

Most of the recipes I've found use the standard Saison hops (saaz, EKG, Stryian Golding etc).
I was thinking of going with Amarillo and Simcoe but didn't know how these hops would play using Belle Saison yeast.

If anyone has brewed a Saison with non standard hops, please post info.
My grain bill is :
85.6% Pilsner
4.9% Vienna
4.9% Pale wheat
4.7% Dark Munich

Hops: (not set on Simcoe & Amarillo)
Not sure of the hops for bittering (CTZ, Magnum, Warrior or other)
Simcoe & Amarillo at 10 min and Zero.
DH with Amarillo
 
I think Amarillo would be great, but I would stay away from Simcoe--I don't personally like the combination of piney or resiny flavors and the phenolic notes from the saison yeast (and I probably wouldn't bitter with CTZ for the same reason).

I brewed a good saison recently with Huell Melon, and I've really liked saisons I've tried with Motueka.
 
I have a decent selection of hops but Huell Melon and Motueka are two I do not have.
Ok. Simcoe is out. Gonna bitter with either warrior or magnum. What about Citra or Mosaic to pair with Amarillo?
I'll prob do a 10 min and 0 addition plus DH.
Trying to decide if I should add Amarillo and whatever other hop I use at all additions or save one for the DH.
