I had an amber malt forward beer with enough cascade finish hops to complement the malts but not make it into a pale ale. This was brewed by a local brew pub and I really liked it but I cannot get a reply from the brewer about any features of the beer so I can try a home brew version. Anyone have suggestions of a recipe for a good fall harvest ale that is not a pale ale?

When I think harvest ale, something Amber/Brown comes in mind to complement the leaves changing color in the fall. How about this as a starting point? An amber with a hint of chocolate malt. It's got a good amount of malt to help offset the cascade finishing hops.

8 lb two row malt
(Or 6.6 lbs light LME for an extract version)
2 lb Crystal 60
2 oz Chocolate Malt
0.5 oz Northern Brewer 60 min
0.5 oz Cascade 30 min
1 oz Cascade flame out

For yeast, perhaps a British Ale yeast with a malt forward profile.
