A long time ago I had an educational book on brewing. I remember it being a GREAT resource, but I can't remember the name of the book... but I do remember one very specific example from the book.
In this section the author described the process of enzymes converting starches into usable sugars like raking up sticks from your back yard. At different temperatures you might be inclined to rake up larger sticks - but as it gets hotter you get tired and only want to rake up smaller leaves. (or something like that).
Does anyone recognize what book that might have been from?
