i recently went to the lhbs and had the employee fill a recipie for me. i got this tub that said 8# pale. it was syrupy extract. when i weighed it i found the tub of stuff weighed only 6 lbs. does dme and lme measure out differently because the recipie calls for 7lbs light dme.

Are you sure your scale is calibrated? If your recipe calls for DME, you typically want to multiply that number by 1.25 to get the equivelent of LME. So in your case, 7 x 1.25 = 8.75 of LME for your recipe.

Either way, even if it was a full 8 pounds, you didn't get enough. But having it weigh out at 6 pounds is remarkably low and I'd go back to your LHBS and see WTF is going on with their measurements, especially if you paid for 8 pounds.
