here are the hops I have.

Amarillo
fresh Chinook hops from my backyard.
Citra
Mosaic
Galaxy
Willamette fresh from my backyard.

I just love Amarillo, and not using those fresh hops would be a shame. Nothing wrong with finishing with Willamette either, I've done it.
