I'm wanting to add a little lemon zest to a blonde i'm brewing. got the zest ready to go, gonna brew up the blonde this evening. just wondering if i should take the peels out before I pour it into primary, or will it be ok to leave them in there?

I always run the wort through as strainer as it enters the carboy to collect hops and misc additions. However, I have added orange and lemon peels to the secondary before, so I can't imagine anything bad will happen if you keep them in the primary.

Zest has very delicate flavors and aromas that are lost when boiled. You would do better adding them to the fermenter, preferably after the more vigorous part is over, to preserve the flavors.

As for putting them in the fermenter, they'll sink to the bottom with a good cold crash.

well i read this too late, and boiled them for 5 mins. then decided against transferring all the trub (hot break, cold break, hops, and zest) into the fermenter. normally i would just toss the whole thing in, but decided against it this time. if there's no lemony flavor or aroma after fermentation, i'll just do some more zest.
