So my grain bill was accidentally messed up - my local store misread my handwriting and gave me 2 lbs of marris otter instead of 7 lbs. I planned on adding 3 lbs of DME to my wort to make up for the loss of grain, but I am short on that as well since I've been using my supply for yeast starters.

Does anybody think that I will have any issues with sterilizing my wort (hitting 180 degrees) then leaving it until tomorrow afternoon when I can get more DME to make up for being short on grain, or would it be better to just start all over again?

I have mashed and left the wort in my boil kettle overnight several times. I do not see that you would have a problem. You're going to boil the wort anyway.
