Little background.
I have made and consumed 3 extract, 2 partials, and 5 all grain ales, and have one in the secondary.
I buy ready to make kits from AustinHomebrew or Northern Brewery.
I am going to make my first attempt at lagering. I plan on making 2 different AG batches on the same day, and am pretty much sold on the first batch, a bock style beer (AHS Spring maibock).
The second beer is the one I am having trouble choosing. I want to make a belgian quad using lager yeast. Has anyone tried anything similar? If it is a stupid idea, go ahead and tell me it is stupid and to just brew a pilsner.
P.S. what yeast would be recommended (if recommended) in this case?
