Has anybody tried it? I'm starting to consider recipes for my April brew and looking at a Biere de Garde or a fruit beer for SWMBO. If fruit, I'm looking putting it in either a Kolsch, a Cream Ale, or a Belgian Pale. SWMBO thinks shed like the Kolsch base...

coming soon...to a fridge near you!

That idea makes a million people in Cologne cry! That said, I think that it would probably taste just fine. Blonde ales, cream ales (without corn!), American wheat beers, and - if you like it tart - Berliner Weisse are all good light/pale bases for fruit beers.

Usually you can get a little bit of fruit flavor from the Kolsch yeast strains. Wyeast 2565 throws a bit of white wine-like flavor.

True - fermented at higher temperatures, they can produce flavor characteristics akin to a Belgian Wit or German Hefe.
