I am doing my first saison today. I know this is a style that is usually bottle conditioned. I am going to keg it as it is much easier to keg and takes less space. My question is should I condition with priming sugar or will force carbing work that same. I have heard mixed reviews about this with a Saison. I would prefer to force carb but I don't want to lose any characteristics the priming sugar would give the beer.
 
Just force carb, it'll be great. I force carb all of my saisons since I don't bottle that much anymore. They taste fantastic.

How long until a Saison is drinkable. I was thinking 3 weeks primary. Keg and Carb? Will that work or should I throw it in my secondary for 2 or 3 weeks more before kegging and carbing?
 
I did mine for a couple in a secondary and then let it set in the keg for about a week before carbing. Can't keep the neighbors out of the shop now.
 
5.4 ABV OG of 1.049, this one is going to be a nice drinker. Looks pretty as of right now. Holding up at 77 degrees in my basements. Been a brutal summer as far as temps go here in PA. I actually have 6 gallons of this. I was going to keg 5 and bottle one. Anyone have any idea what amount of priming sugar I should use for a gallon of saison?
