hey eveyone, im a new to wine making and have just purchased all the materials and plan to make a batch as soon as tomorrow. right now i have a 5 gram bag of some red start yeast in the freezer right now, but if i only use 1 gram tomorrow, can i keep the 4 grams in a plastic baggie for at most a couple of days and be able to use the rest later?

Not really. Those packages keep out oxygen, and once it's opened, the yeast start to absorb oxygen and will only last a very short time. Maybe they'd be ok up to a week or so, maybe not.

But, I don't understand anyway. Those packages are good for 1-6 gallons of wine. One gram isn't enough anyway- you should use the whole package.
 
I usually use part of a package on my one gallon batches.

If you read the packets, they usually say something like they are good for one month after opening if kept in the refrigerator.
