I’m planning on making a 5 gallon ipa extract kit and adding jalapeño for some spice. My question is how many jalapeños should I add and when do I add them? The boil? Fermentation?
 
I make a Habanero pale ale by soaking the cut peppers in 8oz of Vodka for 2 weeks, then adding to the beer at kegging time .

[edit] ...just the vodka, no peppers

I make my Undocumented Ale with mesquite smoked jalapenos and smoked crushed deer corn. Basically a cream ale with peppers and corn. I use a pound of peppers, half in the boil, half in the fermenter. A pound of smoked corn in the mash, gotta boil it first to gelatinize the starch. Smells so good I usually boil a little extra and eat it like grits.

My peppers are pretty mild, you might want to adjust the fermenter quantity after tasting what you get out of the kettle.

Not sure how the ipa hops will play with the jalapeno burn. Might want to back it off a bit. Or not, I dunno.

Seed corn is often treated with chemicals you really, really don't want to ingest. Feed corn is gonna be clean and safe.
