Bought the ITC-1000 to upgrade from my STC-1000. Is it just plug and play meaning does is wire up the same way as the stc-1000?

I believe it does wire up the same way as the STC-1000. I have an ITC-1000 wired up to an old fridge and am using it as a fermentation chamber. I'm thinking I will replace it with an STC-1000+ to get the ability to run different fermentation profiles and relegate the ITC-1000 to running my keezer.

It is similar as in same connections but a different pin out/order iirc
Try to find the itc1000 release thread. I think the relevant info is in there.

According to this, they suggest switching the neutral. I thought you were always supposed to switch the load.

Yes. Neutral remains constant so you don't die fwik. But I think the terminals are in a different order than the stc iirc.

Yes. They are the same wired diagram.
