OK... I just racked my first gallon jug of wine to the secondary and it has an off rubbery taste. Heck, the stuff tastes like drinking turpentine. :drunk:

My question is this... it has been 10 days. What kind of flavor should a wine have after that long? I grant that I used concentrate (just to see what it would be like), but any thoughts? I did only 'cause I have read a lot of other people using concentrate who like it, so I was wondering what it should be like after this long...
 
Sounds like you have a major bacterial infection from this and your other posts. (not you specifically, but your brewing area).
