Thinking of Culturing my own yeast, will this do well?

I have a VERY thin mag stirrer (about 1/4" thick!") that will fit in it nicely.

If it is big enough to fit your flask and keeps a roughly constant temp then sure.

The potential flaw I see is your stir plate. I've got one of those tiny stir plates in my lab, and it is quite hard to get it to stir a large volume. It turns on at full speed instantly, and the stir bar in the liquid cannot keep up. You want to start out slow and build up to speed. But, yours might be different - if it works then let me know the brand!
 
It's a Gilson LabStir. It can handle up to 800ml and has a variable speed control.
