Let's say you have a beer that's been fermenting for a week, and you let it sit for another few days, say 3-5. After all fermentation has stopped, does it harm the beer to let it sit in the carboy? Does it make a difference if it's glass or plastic? Or will it basically not do anything to the beer?
 
It’s ideal to let it sit for a little bit after fermentation. It gives the yeast a chance to clean up waste and other non-desirables produced during active fermentation.
