Didn't have a Noel on hand for Christmas,so cracked a Clos Preal b2. The pressure staring to push the cork off after uncapping, so hopped outside before she blew. Hardly lost any beer though - slight gush and some foam and all good.
Hazy gold, couple floaters. Lovely dried apricot aroma, slight strawberry taste with brisk bitterness. No tartness. And thankfully not a hint of smoky phenols that some reported with batch 2. Champagne dryness. Like an imperialized Saison. Almost 6 years old but feels like it could use another 5 years in the cellar. Worth revisiting if you haven't had one lately.
