Blanche de Bruxelles is pretty phenomenal, as is the St. Bernardus. I can't find anything wrong with either and rank them both as two of my all time favorite beers.
 
(512) Brewing in Austin is also brewing a Celis-collaborated Witbier. Kevin's (at (512)) recipe is very VERY close to the one in my dropdown except he uses all 2-row as the base malt and dried grapefruit peel, since obviously fresh peel is impractical on a commercial scale. The bottling line will be operational this fall, until then if you want to try it you'll have to come down to Austin. :p

Too late now. It's getting near summer. It would be too warm to visit now. (plus the cost...)

I'd love to sample it though, so maybe I'll wait until the bottling line is up and place an order with someone. The Celis White at Michigan Brewing Company is very good, and if it's even close to The Master's recipe, I think I would like the (512) version very much.

I'm not sure what, if anything caused Celis to disassociate himself with MBC. Their Wit and Grand Cru are very nice IMO, although I'm not sure if the GC is in line with the style. I am not well versed in most Belgian styles. I dont care for sour beers and they have their fair share!
 
And while you're in Austin, get yourself a pint of (512)'s incredible Pecan Porter, Real Ale Full Moon Pale Rye, Uncle Billy's Kellerbier, and Live Oak Hefe Weizen. :off:

I tried Wittekerke a couple weeks ago for the first time, and I was VERY impressed. It's so subtle, but crisp and intricate. Didn't hurt that the 6-pack (of cans) was only $6 at Trader Joe's!

I have read this whole thread and cannot believe that this is the only place this wonderful beer has been mentioned.

He was apparentlly close to working with Real Ale. I'd like to see those guys make a wit, since most of their other stuff is pretty good.

Did you see post #60? Kevin says Pierre has graced him with his presence three times since he started the (512) brewery. The recipe is still a work in progress but I can say it is damn good already.

I bet he's a fan of the Pecan Porter too. That beer is crack. I told Kevin I fully expect a gold medal at GABF this year. :D
 
Yea, I knew Celis visited (512) a few months ago. I love the (512) Wit. I don't go out to bars/pubs as much as I used to, so it;ll be hella awesome when they start bottling.
