The recipe I've been using calls for 6.6lbs wheat LME and 1lb Bavarian Wheat DME. I've seen several recipes that don't use any DME at all. Is there a benefit to leaving it out vs using it? WHat kind of difference will it make in the finished beer? I'm assuming it would affect the OG.

Just OG or volume. If you reduce your volume about 10% then you'll be back on target.

LME vs. DME is a personal preference, but they do have slight differences in terms of gravity pts supplied (usually about 36 ppg for LME and 45 ppg for DME). LME is more difficult to store and measure so recipes will often call for multiples of full containers then make up the difference in DME. In your example 6.6 lb LME + 1 lb DME is about 1.056 in a 5 gal batch, vs. 7 lb of LME which is about 1.050.
