I think I made my frist big slip! This past saturday I had a nice little afternoon brewing up an IPA, and just today I noticed that I got the recipe wrong. The recipe calls for 9 lbs of extract and I only used 6 lbs. How will this affect the final product? My intuitive guess is that it will have a lower ABV and be more bitter. Not to say that is a bad thing, I just want to get an idea of what will likely happen.

Also, I've got a sweet stout in secondary right now. It will be 2 weeks on Friday, but I want to let it sit a little longer (did that with an Irsih Red and it turned out fabulously). Anything to worry about? Also, is there an approximate conditioning time before I can really start cracking open bottles left and right?

IPA, you've got it nailed. You probably could mix a little with 3 pounds of extract and add it to the batch, but I have a 3.8 ABV hoppy ale which is quite nice.

No worry on the stout.
 
Yeah, that's going to be one hoppy ale if you followed the hop schedule, but used 3lb. too few of malt. E.g. Less malt to balance the hops... and definitely a lower ABV.

As mentioned, it may not hurt to boil some more water and the 3lb. of malt and add it now. It should ferment out without issue... and you'll have more what you are looking for.

I'm finding that most of my average weight beers really benefit from being in the bottle about a month. And the only way I can stand to leave them that long is to keep brewing. I now have 4 different kinds in the bottle, one in the primary, and one in the secondary.
