I think I made my frist big slip! This past saturday I had a nice little afternoon brewing up an IPA, and just today I noticed that I got the recipe wrong. The recipe calls for 9 lbs of extract and I only used 6 lbs. How will this affect the final product? My intuitive guess is that it will have a lower ABV and be more bitter. Not to say that is a bad thing, I just want to get an idea of what will likely happen.
Also, I've got a sweet stout in secondary right now. It will be 2 weeks on Friday, but I want to let it sit a little longer (did that with an Irsih Red and it turned out fabulously). Anything to worry about? Also, is there an approximate conditioning time before I can really start cracking open bottles left and right?
