Insignia fridge not cold enough

Hey everybody,

I bought an Insignia 165-can beverage cooler which is marketed as being able to go to 34 degrees, but it hovers around 39. I'm using it to dry age meat so I want it a bit cooler, maybe 35 or 36. It has a circuit board and not a thermostat, so I don't know if I can do some wiring and get an inkbird to take control. Does anybody have any experience with modifying Insignia brand fridges so they can cool better?
 
I take it that you have it set to the coldest setting, and that it never gets below 39F. Are you measuring that temp with a calibrated internal probe/thermometer, or is that what you're reading when sticking a thermometer in through an open door?

Assuming 39F is the actual temperature...

Is it constantly running, or does it cycle on an off? If it's the former, it wouldn't help to bypass its thermostat and replace it with an inkbird.
