Hello all,

I've got 1x 5 gal. and 5x 1 gal. carboys in secondary. 2 of the 1 gal. carboys have a crusty white growth. That slowly started a week or so into secondary. Any idea what I'm looking at? Any chance it's something benign or is is definitely bad?

Any thoughts?

Classic exemple of white pellicule.
Try to get it out without breaking it (it will be a tricky move) and the most important, fill up you dame-jeanne with cider or even water if you d'ont have anything else to avoid O2 exposition. Do this also into the other one or it will follow the same path.
But don't waste it away, it may be unchanged or peraps jsut a bit more acetic but totally drinkable.

Not if its not done fermenting.

Limit head space, Pellicille wont hurt you and does provide some interesting flavor.
