I know a lot of people use the Avanti 3500 model, but I am not there yet. I have the 1800 watt 120V model.

That being said, can an extension cord be safely used with these? if so, what kind would I need? I am looking to get maybe 10-15 feet.
 
I can't give you the answer, but there are internet sites which have charts for just this, based on the amperage draw and length of cord you will use.
I've used these resources for sizing extension cords to power shop tools.
 
By my calculations you will have a maximum current draw of 15A, I would use 12AWG , you could use 14AWG and have a minimal voltage drop. If my calculations are right it will be ~1% voltage drop with the 14AWG(minimum), you usually want to stay under 3%. I always like to up size when I am designing anything just to be safe.
