Yesterday we made Beer Pancakes using my AHS Coffee Malt Stout. The stout lent a wonderful malty sweetness that was amazing with maple syrup.
Tonight we did Beer Batter Crepes using AHS Honey Brown.
To fill up the crepes I sliced the chain from a beef tenderloin across the grain to make bite-sized pieces. We made a Beer and Brown Sugar marinade with the stout and soaked them in it.
I then seared the meat bits in a stainless pan. The sauce caramelized a lot and left me with lots of brown bits. I mixed 1/4 cup more stout and 1/4 cup of water and deglazed the pan with it, scraping up the brown goodies. I mixed that with the leftover marinade and boiled it down to a thick glaze. Steak goes in the crepes, glaze on top, brown rice pilaf on the side.
