I know that doesn't sound like a typical FG, but it's been there for a month. OG 1.130. Here's what I've done so far:
Brewed, recipe:
11# LME Syrup
1.1# Wheat ME Syrup
1# Brown Sugar
12 oz. Roasted barley
8 oz. Chocolate Malt
4 oz. Black Patent
4 oz. Chocolate Wheat
8 oz. Carafa III
8 oz. 150L Crystal
8 oz. Special B
2 oz. Nugget Hops (60 min)
2 oz. Northern Brewer Hops (60 min)
1 oz. Williamette (10 min after boil steep)
2 packs dry Safale US-05 pitched @ 76 F
OG: 1.130
2 weeks in primary, moved to secondary as activity slowed. SG 1.065
The estimated OG was 1.111-1.115, so I was surprised to see 1.130. Still, it got down to 1.050 and stayed there for a week. I figured the Safale had just topped out around 12% ABV, so I started a culture of WLP001, which I read can run to 15%. Pitched that, and after another week... 1.050... okay, time for big guns, WLP099, max ABV 25%. Pitched a 1 L starter of that, and while there was some activity for about a day or two, 2.5 weeks later... 1.048. And that's within error tolerances of my hydrometer since I'm eyeballing it.
Meanwhile my hydrometer reads water at 60 F 1.000, and I bottled a Belgian Imperial stout in the meantime that finished around 1.020, right where IT was supposed to. So I've just got a problem child.
The beer is no longer sweet. It was the first time I read 1.050, and it was good!, but sweet. Since then the sweetness has gone, but the gravity hasn't dropped, which I also find peculiar.
SO. What do I do? I'm hesitant to bottle at 1.050, but the gravity hasn't changed for a month. 2 weeks in primary, 6 weeks in secondary... should I just bottle? I've heated, swirled, added more yeast... I don't think it's coming down anymore. Oh and estimated FG is 1.026-1.030.
