Im starting to get things ready for and Ag brew day

My first question is i have a cooler but there is a step inside of it. It has do levels because it has wheels on it. Will this be ok for a mash tun or will i need a flat bottom?

Also can someone show me where i can get a check list on all the equipment i will need so i don't forget anything.

It doesn't matter if it has a step on it. Just build the manifold/ss braid where it is flat against the lowest level.
