Have a sour in secondary from JK, HF, and Loon dregs that has been sitting for almost 3 months. Have pulled a sample and no pellicle. Is that normal? Bad? Good? Doesn't matter?

Have a "lambic" brewed 27 months ago with 3Fdregs that doesn't have a pellicle....doesn't matter

Don't worry about it man, I had a Berliner sit in secondary for around 6 months, saw a pellicle form at around 5 months. Some take longer than others on just how fast they can grow by gobbling **** up in your beer.

Moved some of this batch with fruit and almost immediately got that nice gunk 1 month into it.

Just be patient with it and don't mess with it so much. More you stir it up least likely you are to get some nice film up there.

And like mentioned earlier, some of them don't even form one. Depends on a ton of stuff, as long as it tastes good though!
 
House culture + ECY20 for the raspberry saison I brewed a couple weeks ago. I remember someone (TNGabe ?) saying that ECY20 gave him a raspberry aroma from the pitch. We'll see how she turns out.

After pitching this into the raspberry saison it smells amazeballs and looks even better. I'll be transferring this soon so I'll taste it then.

Yeah, this is only a week after racking onto grapes, but seems that they brought some mold into the mix :(
That sucks man. I remember hearing that white mold is ok but if it's dark or green then it's unsafe. Maybe it's still ok? I have no idea though.

I'm going to try to rack out from under it and just bottle this weekend, we'll see how it goes.

Pull a thief and taste it. I've both had and made brews with funkier looking pellicles that were spectacular. The last thing you want to do is pull the beer to early. Make sure it is in a place you want/will drink first or my vote is to leave it on.

So I pulled a sample from a Saison with JK/HF/loon dregs that has been sitting for ~5 months. Had a pretty strong diacetyl flavor. Is that something that will clear up or am I screwed?

Brett will take care of it. The pedio probably kicked off a ton of diacetyl and now the Brett will clean it up. Long, slow process
