My IIPA just finished 3 weeks of sitting in bottles at 70-72 degrees, so I threw them into the fridge for a week of chilling. I cracked a couple after a few days and it's good except for the excessive head and unappealing mouth feel (my best way of describing it would be "cottony"). I think this might be because I used 6 lbs of Northern Brewer Gold Malt syrup and also 1 lb of flaked barley, too much?.
I left a pint glass half full in the fridge last night and just had the rest of it now. Much better! The excessive bubbling and airiness have gone down significantly and the overall character of the beer shines through more now. I wish it would be like this coming right out of the bottle.
Can anyone tell me about why this is? Is it just because it sat overnight exposed to air so the carbonation dissipated?
