Wife is due to give birth in four months (end of April), I strongly suspect that I shall have a party to wet the babies head disguised as a naming day.

I have done no PMs (just moved from kits to extract only) yet but would like to give it a shot soon.

Any ideas what I could make. Will be autumn here around that time.

My ideas so far :
* Bed Wetter (Lager)
* Sleepness Nights (Coffee Stout)
* Mothers Goodness (Milk Stout)
 
Well, for autumn, I think a coffee stout might be too heavy. I love the idea of a milk stout for obvious reasons. If you have good temperatures for lager, that's a pretty good idea, too. I think a stout, though, is more forgiving for a first PM. I had a bit of a starch haze in my first PM. It tasted great, and it was a darker ale, so that really wasn't a problem. But in a lager, it would be noticeable. I think my temperature went down to much and I didn't convert all the starch- the next ones were much better.

Glad to hear the stouts are easier - that is what I like drinking. I had better have a couple of practice runs at a PM before giving it to guests ;).

I have a couple of hundred bottles ready to go!
 
I agree with doing a milk stout. However, since I don't have a milk stout recipe, here's my regular stout recipe.

McKenna's Red Irish Stout (Partial Mash)

Ingredients:

7 lbs. Light or Amber liquid malt extract

2 lbs Pale Malt
1 lb. Crystal 40L
.5 lbs. Flaked barley
.5 lbs. Roasted barley
.5 lbs. Belgian Special-B
.5 lbs. Chocolate

4 oz.(0.25 lb) Malto-Dextrine

2 oz. Northern Brewer 50 minute boil
1 oz. Cascade 15 minute boil


WLP004 Irish Ale Yeast

Steep grains in 2 gal. of water at 150º to 170º and let grains steep 45 min. Wring out grain bag and remove. Sparge with 3 gal 170º water until it runs clear.

Add extracts and maltodextrin and bring to a boil. Add northern brewer hops and boil for 35 min. Add cascade and boil 15 min. Cool wort, aerate and add to fermentor. Top off up to 5.25 gal if necessary.

I think adding 1/2 lb of lactose would make this a good milk stout.

Not a baptizism, just dipping the baby in the barrel. Gives it a bit more flavour (the beer, not the baby), kinda like cookies!

Seriously though, any ideas for something clever?
 
* Dirty Diaper Dunkel (also works with Dubbel)
* Crying, Colicy Kolsch

Ok, so I like alliteration. It's early and I'm short for ideas.
