My first all grain attempt ended up with high alcohol. I was targeting 8% but ended up at 9.5%. The sample that I tasted has some alcohol burn to it. :mad: Will that strong flavor mellow out with time (bottle conditioning)? If so, Any idea how long it might take? :confused:
 
how long has it been fermenting/conditioning when you tasted it? it /might/ (strong emphasis there) age out in 6-8 weeks if you have bottled it. just fyi, that hot alcohol is usually a result of fermentation temps being a bit too high.
 
The beer is new. It spent just over a week in the primary, then six days is a secondary for dry hopping. I tasted it during bottling yesterday.

Interesting about the flavor coming from a high fermentation temp. This is a saison, so the temps were intentionally a little higher.
 
What was your OG/FG? I doubt it was even done fermenting yet. I'd watch out for bottle bombs.
 
High gravity beers generally benefit from aging, especially since it has only been 2 weeks since you brewed it. Even low gravity beers are traditionally fermented for a bit longer than 2 weeks.

If it was indeed done fermenting, might as well let them sit for awhile (month or two or more) and try it then.
 
I made a mistake in my earlier post. It was two weeks in primary and one in secondary. My SG was 1.075 and FG was 1.004. I got the same 1.004 when I racked to the secondary as well as when I bottled. I am pretty sure fermentation was complete.

I will let it ride for a couple months and see how it is.

That makes me feel better. Yeah, sounds like it was done. Exactly, let it age and you should be good. :mug:
