4 lbs dme
About 4lbs of specialty grains like chocolate malt, Belgium special roast, special b, and biscuit.
Plus maybe a lb of quick oats?
2 oz nugget at 60.
2 oz fuggels at 5.
Maybe secondary with some oak, 8 oz bourbon, and vanilla? Maybe cocoa nibs.
Probably Going to pitch on a fresh yeast bed (red dipa). S05. Or i could use 04 or Nottingham.
Arerate like mad, nutrients at day 0, 3, 7.
Probably hold 6lbs of lme out and add at day 7.
Bulk aging before prime & bottle.
