This is a Tokyo Rose. I’d live to make a cider out of them but they are really expensive, and never seem to go on sale.
They taste like most culinary apples with a little more acid. Great for eating though.

Great looking apples but probably not ideal for cider--I mean fermented cider. Culinary apples are primarily sweet flavor driven while for cider you need bitter and/or acid to drive the character. I'm aware a lot of US cider comes from culinary varieties but at the cost of these particular apples probably getting more enjoyment out of eating them than fermenting them.

I didn’t press this season but next year I will. I’m thinking of blending 70/30 red flesh apple/Porters Perfection.
I get a slight pinkish red hue with Porters.

Are you sure it is a Tokyo Rose? The pics on www show an apple with almost white flesh.
Oops. You are correct.
It is a Mt Rose apple, not a Tokyo rose. I’m not sure how I got that mixed up.
It’s a popular variety where I live.
I usually send a box to family in the southwest but this year I’m slacking.
