I know this is laughable but I thought I would ask it anyway....

Instead of mashing IN the grain, why can't we rinse the sugars and enzymes off/out of the grain after gelatinization and into a secondary pot then do the conversion rests there?

In order to gelatinize, you're going to have to raise the temp. If you raise the temp, conversion begins. So, you're better off letting it complete while the liquid is rich in starches and enzymes, then sparging (rinse the sugars out of the grain).
